A bowl of brothy white beans with dark greens and olive oil, spoon resting inside

Lunch · 35 min · Serves 3

Brothy white beans
with greens.

Soft beans, green broth, and a slick of oil on top. Cheap, quiet, and endlessly repeatable.

You need
Do this
  1. Warm the garlic gently in a generous pool of olive oil until it smells sweet.
  2. Add the beans with their liquid, the lemon peel and a splash of water.
  3. Simmer for twenty minutes until the broth thickens slightly.
  4. Stir in the torn greens for the last five minutes, then finish with chilli and more oil.

Better on the second day. Make double.
