You need
Do this
  1. Fry the chorizo in a dry skillet until the fat runs red and the edges crisp.
  2. Add the onion and garlic and cook until soft, then the corn — leave it alone until it chars.
  3. Stir in the rice and paprika and press it flat. Let the bottom catch.
  4. Fold it once, scatter with coriander, and squeeze lime over the lot.

The crust at the bottom is the best part. Fight for it.
