  1. Whisk the eggs and sugar until pale and thick.
  2. Stream in the olive oil slowly, still whisking.
  3. Fold through the flour, baking powder, zest, juice and salt.
  4. Bake at 175°C for forty minutes, then leave it on the counter, uncovered.
