  1. Flake the tuna into a bowl and fork it apart properly — no clumps.
  2. Stir through the celery, mayo, mustard, lemon, salt and pepper.
  3. Pile it high onto the bread and crown each slice with cheddar.
  4. Grill until the edges go dark and the middle goes soft, about six minutes.
  5. Cut on the diagonal. Eat over the sink if necessary.
